What’s the Best Cut of Steak for Garlic Steak Bites?
The key to juicy steak bites is choosing the right cut of beef. Here are our favorite options:
Sirloin Steak: Sirloin steak is our favorite cut for this recipe because it is flavorful and tender steak, but also affordable.
Ribeye Steak: If you’re looking for even more flavor, Ribeye is a great option, but it’s one of the more expensive cuts. With a Ribeye steak, you will have more fat in the steak. However, fat equals extra flavor, so it’s a bit of a tradeoff.
New York Strip Steak: Strip steaks are a great middle ground with good flavor and texture, but not as tender as a sirloin or ribeye.
Whatever cut you choose, make sure the pieces are cut into evenly sized cubes for consistent cooking.
Ingredients
This recipe only requires a handful of simple ingredients:
- Steak (we recommend sirloin, see above) cut into 1-inch cubes
- Olive oil
- Butter
- Fresh garlic
- Red pepper flakes
- Kosher Salt
- Black pepper
- Fresh parsley (if desired to garnish)
How to Make Garlic Butter Steak Bites
Step 1: Prep the steak
Pat steak dry with paper towel. Cut steak into 1-inch cubes so that they’re small, bite-sized pieces. Season generously with salt and pepper.
A quick cooking tip if you’re having problems cutting the steak into the same size pieces is to flash freeze the steak for about 15-20 minutes prior to cutting it. The reason for this is that frozen steak cuts much easier than room temperature steak. If you only flash-freeze for 15-20 minutes, the steak won’t have time to fully freeze, but it will be firm enough for you to cut the cold steak into even-sized pieces. This slice-and-freeze method also works well with other animal protein, like chicken and pork.
Step 2: Sear the Steak:
Heat a large skillet over medium-high heat. Add the olive oil and let it heat until shimmering. Add the steak cubes in a single layer. Sear for 2-3 minutes per side, or until a golden crust forms. Work in batches if necessary to avoid overcrowding the hot skillet. If the skillet becomes overcrowded, the steak will steam, not sear. To get a better sear with a nice crust, cook the steak in batches. Removed cooked steak and set aside.
Step 3: Make Flavorful Garlic Butter Sauce
in the same skillet add the butter. Turn the heat down to a medium, and stir butter so it melts and doesn’t burn. Once melted, add the garlic and red pepper flakes. Cook for about 30 seconds while stirring, just until the garlic becomes aromatic and starts to brown.
Step 4: Combine and Serve
Return the seared steak bites to the skillet and toss them in the garlic butter sauce. Cook for an additional 1-2 minutes, until steak pieces are fully coated. Serve immediately with chopped parsley as a garnish.
Tips for the Perfect Steak Bites
- A hot skillet is the key to achieving a golden-brown crust. A large cast iron skillet is great for this recipe if you have one so that the pan gets really hot and the steak sears.
- Room temperature steak can be difficult to cut into small, even-sized pieces. If needed, flash freeze the steak for about 15-20 minutes prior to cutting it. Then, cut the cold steak into even-sized pieces. This slice-and-freeze method also works well with other animal protein, like chicken and pork.
- Store leftover steak bites in an airtight container in the refrigerator for up to 3 days. To reheat, place in a skillet over low heat until they are heated through so that they retain their tenderness and flavor.
Easy Garlic Butter Steak Bites Recipe
Ingredients
- 1 1/2 lb Sirloin steak cut into bite size pieces (or strip or ribeye steak)
- 1/2 tsp Kosher salt
- 1/2 tsp pepper
- 2 tbsp butter
- 4 cloves garlic minced
- 1/4 tsp red pepper flakes more or less to taste
- 1 tbsp parsley
